American goulash is the weeknight one-pot of many childhoods: ground beef, macaroni and tomatoes cooked together so the pasta drinks up the sauce. Paprika and a little Italian seasoning give it its familiar taste. A sprinkle of cheddar on top doesn't hurt.

Ingredients

For 4 bowls.

Goulash

  • 1 1/2 lb 93% lean ground beef
  • 1 yellow onion, diced
  • 1 green bell pepper, diced
  • 2 cloves garlic, minced
  • 2 teaspoons sweet paprika
  • 1 teaspoon Italian seasoning
  • 1 (14.5 oz) can crushed tomatoes
  • 1 (8 oz) can tomato sauce
  • 2 cups low-sodium beef broth
  • 8 oz elbow macaroni

Topping

  • 2 oz reduced-fat cheddar, shredded
  • 2 tablespoons chopped fresh parsley

Method

  1. Brown the beef, onion and pepper in a large pot over medium-high heat for 7 minutes, breaking it up, until the beef is 160°F. Stir in the garlic, paprika and Italian seasoning.

    160°F inside
  2. Add the tomatoes, tomato sauce and broth and bring to a boil.

Tips

  • Stir every few minutes once the pasta goes in so it doesn't stick.
  • Don't skip the short rest; the sauce thickens as it sits.
