Black Pepper Steak Stir-Fry
Peppery seared sirloin with onions and crisp peppers.
The heat here comes from black pepper, not chilies, so grind it coarse and add it twice: once on the beef and once in the sauce. Sirloin is lean and tender when it's sliced thin and seared fast in a very hot pan.
Ingredients
For 4 bowls.
Beef
- 1 3/4 lb sirloin steak, sliced thin across the grain
- 1 tablespoon cornstarch
- 1 teaspoon coarsely ground black pepper
- 1 tablespoon canola oil
Sauce
- 3 tablespoons low-sodium soy sauce
- 1 tablespoon oyster sauce
- 1 teaspoon sugar
- 2 teaspoons cornstarch
- 1 teaspoon coarsely ground black pepper
- 1/3 cup water
Vegetables
- 1 yellow onion, cut into wedges
- 1 red bell pepper, cut into strips
- 1 green bell pepper, cut into strips
- 3 cloves garlic, minced
- 2 teaspoons minced fresh ginger
Rice
- 1 cup jasmine rice
- 1 1/2 cups water
Method
Rinse the rice, then bring it to a boil with the water in a small pot. Cover, turn the heat to low and cook 15 minutes. Leave it covered off the heat.
While the rice cooks, slice the steak and toss it with the cornstarch and half the pepper. Cut the vegetables. Stir the sauce ingredients together.

Tips
- Grind the pepper on the coarsest setting; fine pepper turns dusty and harsh.
- Cook the beef in two batches so each strip touches the pan.
