Chicken and Sausage Jambalaya
Smoky one-pot rice with chicken, sausage and the trinity.
Jambalaya starts with the Cajun trinity of onion, celery and green pepper, browned with smoky sausage until the pot has a deep fond. Rice cooks right in the tomatoes and broth and soaks up everything. Chicken andouille keeps the smoke without as much fat.
Ingredients
For 4 bowls.
- 1 1/4 lb boneless skinless chicken thighs, cut into 1-inch pieces
- 8 oz chicken andouille sausage, sliced
- 1 teaspoon canola oil
- 1 yellow onion, diced
- 2 celery stalks, diced
- 1 green bell pepper, diced
- 3 cloves garlic, minced
- 2 teaspoons Cajun seasoning
- 1 1/4 cups long-grain white rice
- 1 (14.5 oz) can diced tomatoes
- 2 cups low-sodium chicken broth
- 1 teaspoon fresh thyme leaves
- 2 bay leaves
- 3 scallions, sliced
Method
Brown the sausage in the oil in a heavy pot over medium-high heat for 3 minutes. Add the chicken and cook 4 minutes more until browned. Move to a plate.
Add the onion, celery and pepper and cook 5 minutes, scraping the pot. Stir in the garlic and Cajun seasoning for 30 seconds.
Add the rice, tomatoes, broth, thyme, bay leaves, chicken and sausage. Bring to a boil, cover, turn the heat to low and cook 20 to 22 minutes until the rice is tender and the chicken is 165°F.
Rest 5 minutes covered, remove the bay leaves, fluff and top with scallions.
Tips
- Don't stir the rice once it's covered; stirring makes it gummy.
- Add a dash of hot sauce at the table rather than in the pot.
