Chicken Cacciatore
Chicken braised with peppers, mushrooms and tomato.
Cacciatore means hunter-style: chicken braised low and slow with peppers, mushrooms, garlic, rosemary and tomatoes until the sauce is thick and rustic. A splash of white wine lifts the browned bits from the pan. Soft polenta catches every bit of sauce.
Ingredients
For 4 plates.
Cacciatore
- 2 lb boneless skinless chicken thighs
- 1 tablespoon olive oil
- 1 yellow onion, sliced
- 1 red bell pepper, sliced
- 1 yellow bell pepper, sliced
- 8 oz cremini mushrooms, quartered
- 4 cloves garlic, sliced
- 1/3 cup dry white wine
- 1 (14.5 oz) can crushed tomatoes
- 1 teaspoon dried oregano
- 1 teaspoon chopped fresh rosemary
- 1/4 teaspoon red pepper flakes
- 1 teaspoon kosher salt
- 1/4 cup sliced black olives
- 1/4 cup fresh basil leaves
Polenta
- 2 1/2 cups water
- 2/3 cup yellow cornmeal
- 2 tablespoons grated Parmesan
Method
Brown the chicken in the oil in a wide pan over medium-high heat, 3 to 4 minutes a side. Move to a plate.
Cook the onion, peppers and mushrooms 6 minutes until browned at the edges. Add the garlic, then the wine, and boil 1 minute.
