Chicken Sausage, Kale and White Bean Skillet
Browned sausage, garlicky kale and creamy beans.
This is the twenty-minute skillet for nights when there's nothing planned: browned chicken sausage, extra diced chicken, garlicky kale and creamy white beans with a squeeze of lemon and a little Parmesan. It reheats well, so it doubles as tomorrow's lunch.
Ingredients
For 4 bowls.
- 12 oz chicken sausage, sliced
- 1 lb boneless skinless chicken breasts, diced
- 1 teaspoon olive oil
- 1/2 yellow onion, diced
- 4 cloves garlic, sliced
- 6 cups chopped kale
- 1 (15 oz) can cannellini beans, drained and rinsed
- 1/2 cup low-sodium chicken broth
- 1 tablespoon fresh lemon juice
- 2 tablespoons grated Parmesan
Method
Brown the sausage and chicken in the oil in a large skillet over medium-high heat for 6 to 7 minutes until the chicken is 165°F. Move to a plate.
Cook the onion 3 minutes, then the garlic for 30 seconds. Add the kale and broth and cook 3 minutes until wilted.

Tips
- Mash a few of the beans with your spoon; they thicken the pan juices.
