Chicken Tagine with Apricots
Warm-spiced chicken, chickpeas, apricots, couscous.
A tagine balances sweet and savoury: cinnamon, cumin and ginger with the honeyed chew of dried apricots and the earthiness of chickpeas. It simmers gently in one pot, no special clay dish needed. Fluffy couscous takes five minutes.
Ingredients
For 4 bowls.
Tagine
- 2 lb boneless skinless chicken thighs, cut into large pieces
- 1 tablespoon olive oil
- 2 yellow onions, chopped
- 3 cloves garlic, minced

- 1 1/2 cups low-sodium chicken broth
- 1/4 cup chopped fresh cilantro
- 2 teaspoons lemon zest
Couscous
