French Onion Chicken Skillet
Jammy onions, melted Gruyère, seared chicken.
Everything you love about French onion soup, piled onto seared chicken: onions cooked slowly until deep and sweet, a splash of beef broth and thyme, then a blanket of Gruyère melted under the broiler. Toasted baguette slices soak up the juices like the soup's croutons would.
Ingredients
For 4 plates.
Onions
- 3 large yellow onions, thinly sliced
- 1 tablespoon unsalted butter
- 1 teaspoon olive oil
- 1 teaspoon fresh thyme leaves
- 1 tablespoon all-purpose flour
- 1 cup low-sodium beef broth
- 1 teaspoon Worcestershire sauce
Chicken
- 2 lb boneless skinless chicken breasts, halved horizontally
- 1/2 teaspoon kosher salt
- 1 teaspoon olive oil
- 3 oz Gruyère, shredded
To serve
- 4 oz baguette, sliced and toasted
Method
Cook the onions in the butter and oil in a large ovenproof skillet over medium heat for 25 minutes, stirring every few minutes, until deep golden and jammy.
Meanwhile, slice the chicken into cutlets and season with salt.

Tips
- Give the onions the full 25 minutes; pale onions taste flat.
- Use an ovenproof skillet so it can go straight under the broiler.
