Gyudon Beef Rice Bowls
Sweet-savoury simmered beef and onions over rice.
Gyudon is the fastest comfort food in Japan: paper-thin beef and onion simmered in a sweet soy broth, spooned over rice so the juices soak in. Sirloin keeps it lean, and a soft-boiled egg on top makes it rich. It's on the table in twenty-five minutes.
Ingredients
For 4 bowls.
Rice
- 1 1/4 cups short-grain rice
- 1 3/4 cups water
Soft eggs
- 4 large eggs
Beef and onions
- 1 3/4 lb sirloin steak, sliced paper-thin
- 2 yellow onions, thinly sliced
- 1 cup water
- 1/4 cup low-sodium soy sauce
- 3 tablespoons mirin
- 2 tablespoons sake
- 1 tablespoon sugar
- 1 teaspoon grated fresh ginger
- 2 scallions, thinly sliced
Method
Rinse the rice, then bring it to a boil with the water in a pot. Cover, turn the heat to low and cook 15 minutes. Leave it covered off the heat.
Lower the eggs into boiling water and cook 7 minutes, then move them to cold water and peel.

Tips
- Ask the butcher to slice the beef thin, or freeze it for 20 minutes and slice it yourself.
- Simmer gently; boiling toughens thin beef in seconds.
