Lemongrass Chicken Banh Mi

Crackly roll, lemongrass chicken, quick pickles.

30 min total23 min activeMakes 4 sandwiches
Method in Pro

The bread should crackle and the fillings should do the rest: savoury caramelised chicken, sharp pickled carrot and daikon, cool cucumber, cilantro and a swipe of spicy mayo. The pickles take ten minutes and keep for a week. Thighs stay juicy under the broiler.

Ingredients

For 4 sandwiches.

Quick pickles

  • 2 carrots, cut into matchsticks
  • 1 cup daikon radish, cut into matchsticks
  • 1/2 cup rice vinegar
  • 1 tablespoon sugar
  • 1/2 cup warm water

Lemongrass chicken

  • 1 1/2 lb boneless skinless chicken thighs
  • 2 stalks lemongrass, finely minced
  • 3 cloves garlic, minced
  • 2 teaspoons fish sauce
  • 1 tablespoon light brown sugar, packed
  • 2 teaspoons canola oil

To build

  • 4 French rolls (2 1/2 oz each)
  • 3 tablespoons light mayonnaise
  • 2 teaspoons sriracha
  • 1/2 English cucumber, cut into spears
  • 1 cup fresh cilantro sprigs
  • 1 jalapeño, thinly sliced

Method

  1. Stir the vinegar, sugar and warm water until the sugar dissolves. Add the carrot and daikon and press them under the liquid. Leave at least 10 minutes.

  2. Toss the chicken with the lemongrass, garlic, fish sauce, sugar and oil.

Tips
