Mango lassi is the cooling yogurt drink served with curry; frozen, it becomes the best ice pop. Ripe mango, thick Greek yogurt, a little honey and a pinch of cardamom blend in a minute. A scoop of whey makes them creamy rather than icy.

Ingredients

For 4 portions.

  • 2 cups plain 2% Greek yogurt
  • 2 cups frozen mango chunks
  • 3 tablespoons honey
  • 1 scoop unflavored whey protein isolate (about 1/3 cup)
  • 1 tablespoon fresh lime juice
  • 1/4 teaspoon ground cardamom

Method

  1. Blend everything until completely smooth.

  2. Pour into 8 ice pop moulds, add sticks and freeze at least 6 hours until solid.

Tips

  • Frozen mango chunks work as well as fresh and are always ripe.
  • Taste the mix before freezing; cold dulls sweetness, so it should taste slightly too sweet.
