Maple-Glazed Baked Donuts
Soft cake donuts with a real maple glaze.
Baked donuts are tender little cakes made in a donut pan, ready in twenty-five minutes with no frying. Greek yogurt and a scoop of whey keep them soft and filling, and the glaze is just powdered sugar and pure maple syrup. Two make a serving with coffee.
Ingredients
For 4 portions.
Donuts
- 3/4 cup all-purpose flour
- 1 scoop unflavored whey protein isolate (about 1/3 cup)
- 1 1/2 teaspoons baking powder
- 1/4 teaspoon baking soda
- 1/8 teaspoon kosher salt
- 3/4 cup plain nonfat Greek yogurt
- 1 large egg
- 1 large egg white
- 1/4 cup pure maple syrup
- 2 tablespoons unsalted butter, melted
- cooking spray
Maple glaze
- 1/2 cup powdered sugar
- 1 tablespoon pure maple syrup
Method
Heat the oven to 375°F and spray an 8-cup donut pan. Whisk the dry ingredients, then whisk the yogurt, egg, white, maple syrup and butter in another bowl and fold the two together.
Pipe or spoon the batter into the cups, two-thirds full.

Tips
- Fill the donut cups only two-thirds full or they lose their hole.
- Glaze while they're still slightly warm so it sets thin and shiny.
