Miso-Glazed Salmon Sheet Pan
Sweet-salty miso salmon, broccoli and sweet potato.
A thin layer of miso, honey and rice vinegar on salmon caramelises under the oven's heat and seasons the fish right through. The sweet potatoes get a head start, then everything finishes on one pan. It's dinner in twenty-five minutes and lunch the next day.
Ingredients
For 4 plates.
Vegetables
- 1 lb sweet potatoes, cut into 3/4-inch cubes
- 4 cups broccoli florets
- 1 tablespoon canola oil
Salmon
- 1 3/4 lb salmon fillet, cut into 4 pieces
- 2 tablespoons white miso
- 1 tablespoon honey
- 1 tablespoon rice vinegar
- 1 teaspoon toasted sesame oil
- 1 teaspoon sesame seeds
- 2 scallions, sliced
Method
Heat the oven to 425°F. Toss the sweet potatoes with half the oil on a sheet pan.
Roast the sweet potatoes 8 minutes.

Tips
- Brush the glaze on thin; a thick layer scorches before the fish is cooked.
- Cut the sweet potatoes small so they cook in the same time as the salmon.
