Salisbury Steak with Mushroom Gravy
Juicy beef patties, onion-mushroom gravy, mashed potatoes.
Salisbury steak is a TV-dinner memory worth redoing properly: seasoned beef patties browned hard, then simmered in a real mushroom and onion gravy. Yukon Golds mashed with a little milk and Greek yogurt are creamy enough to need almost no butter. It's comfort food that tastes cooked, not reheated.
Ingredients
For 4 plates.
Mashed potatoes
- 1 1/2 lb Yukon Gold potatoes, peeled and cut into chunks
- 1/3 cup 2% milk
- 1/4 cup plain nonfat Greek yogurt
- 1 teaspoon unsalted butter
Patties
- 1 1/2 lb 93% lean ground beef
- 1/4 cup plain breadcrumbs
- 1 large egg white
- 1/2 yellow onion, grated
- 1 teaspoon Worcestershire sauce
- 1 teaspoon Dijon mustard
- 1/2 teaspoon kosher salt
- 1 teaspoon olive oil
Gravy
- 8 oz cremini mushrooms, sliced
- 1/2 yellow onion, thinly sliced
- 2 tablespoons all-purpose flour
- 1 1/2 cups low-sodium beef broth
- 1 tablespoon tomato paste
- 1 teaspoon Worcestershire sauce
- 1/2 teaspoon kosher salt
Method
Cover the potatoes with cold water in a pot, bring to a boil and cook 15 to 18 minutes until tender.
Meanwhile, mix the patty ingredients except the oil and shape into 4 ovals about 3/4 inch thick.
