Shrimp and Grits
Creamy cheddar grits, garlicky shrimp, a smoky edge.
Lowcountry shrimp and grits is all about the contrast between soft, cheesy grits and shrimp seared hard in a hot pan. Milk and a spoon of Greek yogurt make the grits creamy, and a little turkey bacon brings the smoke. Quick grits mean it's ready in twenty-five minutes.
Ingredients
For 4 bowls.
Grits
- 2 cups skim milk
- 2 cups water
- 1 cup quick grits
- 4 oz reduced-fat sharp cheddar, shredded
- 1/2 cup plain nonfat Greek yogurt
Shrimp
- 1 oz turkey bacon, chopped
- 1 1/4 lb large shrimp, peeled and deveined
- 1 teaspoon smoked paprika
- 3 cloves garlic, minced
- 1 tablespoon unsalted butter
- 1 tablespoon fresh lemon juice
- 3 scallions, sliced
- 1 lemon, cut into wedges
Method
Bring the milk and water to a simmer in a pot, then whisk in the grits.
Cook 5 to 7 minutes over low heat, whisking often, until thick. Off the heat, stir in the cheese and yogurt and cover.

Tips
- Whisk the grits as you pour them in so they don't clump.
- Pull the shrimp the moment they curl into a C; an O means overcooked.
