Cuban Mojo Pork Sandwiches
Garlic-citrus pork, ham, Swiss and pickles, pressed.
Mojo is the garlicky sour-orange marinade at the heart of Cuban roast pork. Orange and lime juice stand in for sour orange, and a lean tenderloin roasts in twenty minutes instead of hours. Pressed with ham, Swiss, pickles and mustard, it turns into the classic sandwich.
Ingredients
For 4 sandwiches.
Mojo pork
- 1 1/2 lb pork tenderloin
- 1/2 cup orange juice
- 2 tablespoons fresh lime juice
- 6 cloves garlic, grated
- 1 teaspoon ground cumin
- 1 teaspoon dried oregano
- 1 tablespoon olive oil
Sandwiches
- 4 Cuban or hoagie rolls (3 oz each)
- 3 oz thinly sliced deli ham
- 4 slices Swiss cheese
- 2 oz dill pickle slices
- 2 tablespoons yellow mustard
- cooking spray
Method
Whisk the orange and lime juice, garlic, cumin, oregano and oil. Coat the pork and marinate 15 minutes in the fridge while the oven heats to 425°F.
Roast the pork on a foil-lined pan for 18 to 22 minutes until 145°F in the thickest part. Rest 5 minutes, then slice thin.

Tips
- Press the sandwiches under a heavy pan; a flat, crisp crust is the point.
