Detroit-Style Sausage Pan Pizza
Crisp-edged square pizza with fennel turkey sausage.
Detroit pizza is baked in a rectangular pan with cheese pushed right to the edges, so it fries into a lacy, crunchy crust. Homemade fennel turkey sausage keeps the topping meaty without the salt of store-bought links. The sauce goes on in stripes after baking, the Detroit way.
Ingredients
For 4 squares.
Crust
- 1 lb pizza dough, at room temperature
- 1 tablespoon olive oil
Fennel turkey sausage
- 1 lb 93% lean ground turkey
- 1 teaspoon fennel seeds, crushed
- 2 cloves garlic, minced
- 1/2 teaspoon red pepper flakes
- 1/2 teaspoon smoked paprika
Cheese and sauce
- 8 oz part-skim mozzarella, cut into small cubes
- 1 cup crushed tomatoes
- 1/2 teaspoon dried oregano
- 2 tablespoons grated Parmesan
Method
Oil a 9-by-13-inch metal pan. Press the dough into it, cover and let it relax 20 minutes, then press it into the corners.
Meanwhile, heat the oven to 500°F. Cook the turkey with the fennel, garlic, pepper flakes and paprika in a skillet over medium-high heat for 6 to 7 minutes, breaking it up, until browned and 165°F.

Tips
- Let the dough rest in the oiled pan until it stretches into the corners without springing back.
- Use a dark metal pan if you have one; it browns the crust best.
