Restaurant naan comes out of a tandoor, but a very hot cast-iron pan gives the same blistered, puffy flatbread. This dough rises with baking powder and Greek yogurt, so it's ready in thirty minutes with no yeast. Brush with garlic butter and cilantro as each one comes off the heat.

Ingredients

For 6 naans.

Naan dough

  • 2 cups all-purpose flour
  • 1 scoop unflavored whey protein isolate (about 1/3 cup)
  • 1 1/2 teaspoons baking powder
  • 1/2 teaspoon kosher salt
  • 3/4 cup plain nonfat Greek yogurt
  • 1/3 cup warm water

Garlic butter

  • 1 1/2 tablespoons unsalted butter
  • 3 cloves garlic, minced
  • 2 tablespoons chopped fresh cilantro

Method

  1. Mix the flour, whey, baking powder and salt, then stir in the yogurt and water and knead 2 minutes until smooth. Cover and rest 10 minutes.

  2. Meanwhile, melt the butter with the garlic over low heat for 2 minutes.

Tips

  • Roll the dough thin and cook on a very hot dry pan; it should bubble within a minute.
  • Keep cooked naan wrapped in a towel so they stay soft.
