Nashville Hot Chicken Sliders
Cayenne-glazed crispy chicken on soft slider buns.
Nashville hot chicken is fried chicken brushed with a cayenne-spiked oil the moment it comes out of the fryer. An air-fried panko crust holds the glaze just as well. Pickles and a tangy yogurt slaw cool it down.
Ingredients
For 4 sliders.
Chicken
- 1 1/2 lb boneless skinless chicken breasts, cut into 8 pieces
- 1/2 cup low-fat buttermilk
- 1 tablespoon hot sauce
- 1/4 cup all-purpose flour
- 1 cup panko breadcrumbs
- 1/2 teaspoon kosher salt
- cooking spray
Hot oil
- 2 tablespoons canola oil
- 1 tablespoon cayenne pepper
- 1 teaspoon light brown sugar, packed
- 1 teaspoon smoked paprika
- 1/2 teaspoon garlic powder
Slaw
- 2 cups finely shredded green cabbage
- 1/4 cup plain nonfat Greek yogurt
- 1 tablespoon apple cider vinegar
Sliders
- 8 slider buns (1 oz each)
- 2 oz dill pickle slices
Method
Toss the chicken with the buttermilk and hot sauce and refrigerate 10 minutes.
Meanwhile, toss the cabbage with the yogurt and vinegar.
Mix the flour, panko and salt. Lift the chicken from the buttermilk, press it into the crumbs and spray with oil.
Air fry at 400°F in two batches, 8 to 9 minutes each, turning once, until deep golden and 165°F.
Warm the oil with the cayenne, sugar, paprika and garlic powder in a small pan for 1 minute.
Brush the hot chicken with the spice oil. Build the sliders with chicken, pickles and slaw.
Tips
- Brush the spice oil on while the chicken is still hot so it soaks in.
- Use 2 teaspoons of cayenne for medium, a full tablespoon for proper Nashville heat.
