Biscuits and Turkey Sausage Gravy
Flaky buttermilk biscuits under peppery sausage gravy.
Biscuits and gravy is Southern breakfast at its most comforting, and this version keeps all of it: tall buttermilk biscuits and a thick, peppery gravy full of browned sausage. Turkey sausage and skim milk lighten the gravy, and a scoop of whey in the biscuits makes the plate filling. Plenty of black pepper is essential.
Ingredients
For 4 plates.
Biscuits
- 1 1/2 cups all-purpose flour
- 1 scoop unflavored whey protein isolate (about 1/3 cup)
- 2 teaspoons baking powder
- 1/4 teaspoon kosher salt
- 3 tablespoons cold unsalted butter, cubed
- 2/3 cup low-fat buttermilk
Sausage gravy
- 12 oz turkey breakfast sausage
- 3 tablespoons all-purpose flour
- 2 1/2 cups skim milk
- 1 teaspoon ground black pepper
- 1/2 teaspoon dried sage
- 1 tablespoon chopped fresh chives
Method
Heat the oven to 450°F. Whisk the flour, whey, baking powder and salt, cut in the butter until pea-size, then stir in the buttermilk. Pat out, fold in half twice, pat to 3/4 inch thick and cut 6 biscuits.
Bake on a parchment-lined sheet for 12 to 14 minutes until tall and golden.

Tips
- Fold the biscuit dough over itself twice for flaky layers.
- Cook the flour in the sausage fat for a full minute so the gravy doesn't taste raw.
